OK, OK, OK, I know it is now February 18th, and this is a January cupcake recipe.  I am behind, but I am catching up, and here comes another Food Network Recipe.  In a previous post, I blogged about my February cupcake (which was a HUGE hit), and that I will be publishing a monthly themed cupcake.  So I ran across this recipe, which I made a few adjustments to, because I didn't have a vanilla bean in my house.  So the recipe below is how I made the cupcake and frosting, as I made a few slight variations to the original recipe. Quick Weeknight Meal - Cheese Steaks!

Happy Saturday Everyone! So, as you have read in previous blog posts, I am a working mom. When I get home, I need something to cook that is quick and easy, so I can spend more time with my family in the evenings.  Cheese steaks are a simple solution to a quick fix, and is a crowd pleaser in my household.  Victoria had her first cheese steak at 1 1/2 years old in Philadelphia at Pat's (yes I prefer Pat's over Geno's).  Ever since then, she has been obsessed with cheese steaks. Family Recipes - Poppy Seed Chicken

This recipe is on constant rotation in regards to being prepared monthly, mainly because it is super easy and super tasty.  Poppy Seed Chicken Casserole, came into my life many moons ago, when my Aunt Robin prepared it for a family gathering.  Let me start by saying, I ate half of the casserole by myself.  Ever since then, it is a dish that is "a must" prepare, not an ask to prepare whenever the family gets together (as you can tell, I still get my way at age 34)! Stubbs Hatch Chile Chicken - Crock Pot

I am always finding quick and easy recipes to prepare during the week because I am a working mom, and all I want to do when I get home is rest my mind and body!  My husband and I went to the grocery store this past weekend, and stumbled across Stubb's Crock Pots.  I normally try my best to not bring my husband or daughter to the grocery store with me, because it is a constant battle of telling them to act their age.  Shopping cart races down the aisles, one of the two passing gas and then rushing to the next aisle so everyone in the store thinks its me, and of course random items showing up in the basket that were not on the grocery list.  Well this time, having the hubby with me turned out to be helpful as he is the one that spotted the Stubb's Crock Pot packets.
