This recipe is on constant rotation in regards to being prepared monthly, mainly because it is super easy and super tasty. Poppy Seed Chicken Casserole, came into my life many moons ago, when my Aunt Robin prepared it for a family gathering. Let me start by saying, I ate half of the casserole by myself. Ever since then, it is a dish that is "a must" prepare, not an ask to prepare whenever the family gets together (as you can tell, I still get my way at age 34)! I introduced this once I started dating my husband 13 years ago and he loved it, and then again got to introduce this recipe to my daughter as soon as she started eating solid food and she even loves it. The best part is, you can double the recipe and freeze whatever you don't use, to have for a quick dish during the week when you don't have time to prepare a full meal.
