Blueberry Pie for the Win!

Image
It is closing in on the end of summer vacation, and September 22nd can't get here fast enough with the official start to fall.  However, in my house, the word fall means one thing and one thing only - FOOTBALL SEASON STARTING! That is our true start to fall in my house, as my husband is the defensive coordinator for one of the biggest and BEST high school football programs in the state of Oklahoma.  I laugh every year because I say "We interrupt this marriage to bring you football season!"  It is so true!  If you know anything about football in the great state of Oklahoma, high school and college games dominate social media with updates and banter back and forth between rivals. For me, it is a time where I get back in the kitchen again, as the hubby is off working late nights and 7 days a week at the field house, it leaves me to my own imagination in the kitchen.  Plus we work on feeding a football program of 175 plus (yes I said 175)!  I am bringing ...

Pickle Cupcakes - April Cupcake of the Month

Image
Happy Thursday to you! I know it has been over a month since my last post, but the Foster family has been hard at work doing a complete Reno on Victoria's playroom.  I will do a post showing our progress of before and after pictures soon. Pickle Cupcakes - WHAT!?  I know, right, crazy.  Well if April Shower's bring Mayflowers, what do Pickle's bring?  They bring one happy friend and colleague of mine.  This recipe all came about as I came across one of her posts on Facebook.  What you don't know is she LOVES pickles and posted this recipe from Delish.  I had to make them for her, because I was just as curious to know what they would taste like. So the challenge was set, and let me tell you, this recipe is super easy, and the cupcakes tasted amazing.  It is all about the little salty/sour and a little sweet, and the bourbon cream cheese icing I will use for other recipes down the road - HOME RUN!  Take a step out of your traditional ...

Oreo Cheesecake Cookies

Image
Happy Tuesday Everyone, You are going to love this recipe - it is only 5 ingredients!  I ran across this recipe for Oreo Cheesecake Cookies on Pintrest, when I was searching for a quick dessert recipe for Valentines day.  There are several variations of the recipe, like putting dye in the cookie dough to make it more holiday festive (red for Valentines Day, green for St. Patrick's Day). The pictures at the bottom are doubling the recipe you see below, because my taste testers are not only the hubby and Vee, but also all my colleagues at my office. I love baking with Oreo's!  Whether it is for a crust, a crumble, baked inside, or even by themselves dunked in a cold glass of milk.  I have to tell you a story.  When I was younger, I took an entire tin of Oreo cookies, while watching Saturday morning cartoons, and I ate the inside of every single cookie. Not only did I eat the inside of every Oreo, but I sandwiched them back together and then put them back in th...

Champagne Vanilla Cupcakes - January Cupcake

Image
OK, OK, OK, I know it is now February 18th, and this is a January cupcake recipe.  I am behind, but I am catching up, and here comes another Food Network Recipe.  In a previous post, I blogged about my February cupcake (which was a HUGE hit), and that I will be publishing a monthly themed cupcake.  So I ran across this recipe, which I made a few adjustments to, because I didn't have a vanilla bean in my house.  So the recipe below is how I made the cupcake and frosting, as I made a few slight variations to the original recipe. Looking back at January, my house was filled with lots of goals to tackle 2018!  I actually started a goal book, and have been adding to it as I think of different things I would like to accomplish in my life.  One of them is this food blog, but honestly, do you know how rewarding it is to scratch off a goal that you have accomplished? Another goal of mine is to become a better expert in icing, marinades, vinaigrette's, and ot...
