Family Recipes - Poppy Seed Chicken
This recipe is on constant rotation in regards to being prepared monthly, mainly because it is super easy and super tasty. Poppy Seed Chicken Casserole, came into my life many moons ago, when my Aunt Robin prepared it for a family gathering. Let me start by saying, I ate half of the casserole by myself. Ever since then, it is a dish that is "a must" prepare, not an ask to prepare whenever the family gets together (as you can tell, I still get my way at age 34)!
I introduced this once I started dating my husband 13 years ago and he loved it, and then again got to introduce this recipe to my daughter as soon as she started eating solid food and she even loves it. The best part is, you can double the recipe and freeze whatever you don't use, to have for a quick dish during the week when you don't have time to prepare a full meal.

Ingredients:
2 10.5oz. cans of Cream of Mushroom Soup
8oz. Sour Cream (small container)
5 Boneless/Skinless Chicken Breasts
3 Sleeves Ritz Crackers
1/2 Cup Salted Melted Butter
1 Tablespoon of Poppy Seeds
Directions:

Ingredients:
2 10.5oz. cans of Cream of Mushroom Soup
8oz. Sour Cream (small container)
5 Boneless/Skinless Chicken Breasts
3 Sleeves Ritz Crackers
1/2 Cup Salted Melted Butter
1 Tablespoon of Poppy Seeds
Directions:
- Preheat oven to 350 degrees, and grease a 13x9 inch baking dish
- Place chicken breasts in a large pot and fill with water covering the tops of the chicken breast
- Bring to a boil on the stove and let the chicken boil in the water for 30 minutes or until cooked through
- Meanwhile, mix the 2 cans of Cream of Mushroom Soup and Sour Cream in a large bowl.
- Crunch up the three Ritz Cracker sleeves into time pieces inside their wrappers.
- Combine 2 of the Ritz Cracker sleeves into the mushroom soup and sour cream mixture.
- Once the chicken is done, drain the water and dice the chicken into small pieces.
- Add the chicken to the mushroom soup and sour cream mixture, and mix well.
- Spread the mixture into your prepared 13x9 inch backing dish, leveling out the top.
- Sprinkle the 3rd Ritz Cracker sleeve onto the top of the casserole, evenly coating.
- Sprinkle the poppy seeds over the top of the casserole.
- Pour evenly the melted butter over the top of the prepared casserole.
- Bake for 20-25 minutes or until the casserole bubbles slightly
- Let set for 5 minutes and then serve and enjoy!
