Spicy Mango Shrimp, Stir Fried Veggies, and Caribbean Jerk Potatoes
Happy President's Day,
Every Christmas, my in-laws make a non traditional Christmas dinner. Steak and shrimp - who doesn't love that? One Christmas my Father In-Law marinaded the shrimp is a spicy mango marinade by KC Masterpiece, and since then I have been obsessed with this marinade. I put it on everything.
For this weekend dinner, we have prepared an island themed creation that I would love to share with you. This meal will have you dreaming you are on a beach, somewhere sunny and warm, and not buried underneath a million blankets during this cold winter!
In grilling the shrimp, I actually have a five in one griddle from Cuisinart (panini press, grill, griddle, waffle) and I love it, especially when it is freezing outside, and the charcoal grill just doesn't seem that inviting. For the vegetables, I use a wok to stir fry veggies, which I ended up picking up from a garage sale about 20 years ago. If you don't own a wok - you should definitely invest in one (we use it all the time).

Ingredients:
For the Vegetable Stir Fry:
1 yellow bell pepper - chopped
1 red bell pepper - chopped
1 small container of mushrooms (pick your desired flavor) - sliced
1 bunch of broccoli - just use the florets and chop
1/2 bottle of KC Masterpiece Spicy Mango Marinade
1 tablespoon of Extra Virgin Olive Oil
Salt & Pepper to Taste
Ingredients for the Caribbean Jerk Potatoes:
1/2 stick butter
2 tablespoons of extra virgin olive oil
1 tablespoon of McCormick's Caribbean Jerk Seasoning
4 large russet potatoes - cubed with skin on
Ingredients for the Shrimp:
1 lb. shrimp - de-veined, peeled, and cleaned
1 bottle of KC Masterpiece's Spicy Mango Marinade

Chop the bell peppers |
Slice the mushrooms |
Chop the broccoli florets |
Toss veggies with marinade |
Add EVOO to wok and allow to heat up on medium heat |
Add veggies to wok and let them sweat for a few minutes |
Toss the veggies with a tong and cook for another 5 minutes |
Remove from wok and enjoy |
1/2 stick butter
2 tablespoons of extra virgin olive oil
1 tablespoon of McCormick's Caribbean Jerk Seasoning
4 large russet potatoes - cubed with skin on
Directions:
After cubing the potatoes coat the potatoes with the EVOO |
Add the seasoning to the potatoes and toss |

In a preheated 350 degree oven, melt the butter in a 13x9 inch pan |
Lay the potatoes in one even row and bake turning over once for 30-45 minutes or until golden brown |

1 lb. shrimp - de-veined, peeled, and cleaned
1 bottle of KC Masterpiece's Spicy Mango Marinade
Directions:
Prior to skewering the shrimp let the shrimp marinade in a Ziploc bag overnight.
Remove from refrigerator and let sit for 30 minutes.
Skewer the marinated shrimp 8-10 at a time |
Add shrimp to the grill that is on medium to high heat for 5-7 minutes turning halfway |
